Café Vino Sunday Night Wine Dinner

I’m gonna let y’all in on a little secret.  The best bargain in town can be found at Café Vino every Sunday night.  It is our Sunday night wine dinner.  Three courses three wines for $39 and just recently we have added an occasional 4th course for an additional $10.

The wine dinner changes every Sunday and you never know what it’s going to entail.  Our very talented chefs get the opportunity to do something different and new every single week.  Matt Manuel, Sous Chef, loves the chance he gets to branch out and use different ingredients every week.

One of our chefs starts preparing their menu at least 5 days in advance.  They use a multitude of different research materials such as Instagram, cook books, ideas from their favorite chefs, produce that one of our farms brings in all to come up with this amazing meal.  Each week is seasonally inspired utilizing seasonal flavors and local produce.  One of this week’s inspirations came from red kuri squash that we get from Buena Vida farm.

Matt’s favorite wine dinner to date was actually served a couple of weeks ago.  The first course was sweet potato skordalia accompanied by flat bread with dehydrated apples and fingerling potato chips.  The second course was a savory galette of mozzarella, roasted butternut, leeks and a butternut béchamel with sage and a balsamic reduction.  The third course was braised short rib served with a Dijon-herb spaetzle, red kuri squash, Hazel Dell mushrooms, onions and a red chimichurri.  We all loved this course so much it is now on our menu but with a New York strip instead of the short ribs.  The final course was vanilla cardamom cake with a red kuri squash ice cream and lemon dust.

Don’t worry I didn’t forget about one of the most important parts, the wine.  One of our resident sommelier’s Samantha Rhys pairs the dinner each week.  Sam gets her hands on the menu on Friday to start thinking about the pairing.  Her main focus for the pairing is how the chemistry for the food and the wine play off of one another.  She’s always here Sunday nights  so the next time you are in ask her about her pairings and her love of wine.
